Cherry Tomato Marinara with Zucchini Noodles

Marinara Over Zucchini Pasta
Note: 

My first raw food recipe, and a testament to what's available at the local farmer's market right now.   Light and DELISH!  Enjoy!

Tools needed: 
spiral slicer, food processor
Time: 
10 minutes
Ingredients: 
2 pints cherry tomatoes
2 tsp dried oregano
1 tsp dried rosemary
2 tbs lemon juice
2/3 cup olive oil
1 tsp salt
2 zucchini, cut into very thin strips (with a spiral slicer, if possible)
Ingredients for Garlic-Cashew "Cheese" topping:
1 clove garlic
1/2 tsp salt
1 cup cashews
Directions: 
  1. To make cashew-garlic "cheese": Process garlic and salt. add cashews and process into a powder.  Set aside.
  2. Place all other ingredients except zucchini in food processor.  Blend until smooth.  Makes three cups.
  3. Place zucchini noodles in a serving bowl; pour marinara over and toss gently.
  4. Sprinkle with cashew-garlic "cheese"
